1 chow chow, peeled and cubed
1 cup dal (lentils)
1 potato, cubed
1 carrot, cubed
1 green beans, chopped
2 tomatoes, chopped
1 teaspoon tamarind paste
1 teaspoon turmeric powder
Salt to taste
For the tempering: 1 tablespoon oil + 1 teaspoon mustard seeds + 1 teaspoon cumin seeds + 1 dried red chili + 1 sprig curry leaves
- Pressure cook the dal and vegetables with enough water for 3-4 whistles.
- Add the tamarind paste, turmeric powder and salt. Mix well and cook for another minute.
- Heat oil in a pan for the tempering. Add mustard seeds, cumin seeds, dried red chili and curry leaves. Let it splutter.
- Add the tempering to the kootu and mix well. Serve hot with rice or roti!
