1 chayote squash, peeled and cubed

1/2 cup moong dal

1/4 cup tamarind paste

For the tempering:

1 tbsp. oil

1 tsp. mustard seeds

1 tsp. cumin seeds

Recipes for Chow Chow Kootu

Chow chow kootu is a delicious and healthy dish from Tamil Nadu, India. It is made with chow chow (a type of squash), dal (lentils), and vegetables. The kootu is usually served with rice or roti (flatbread).

Ingredients:

1 chow chow, peeled and cubed

1 cup dal (lentils)

1 potato, cubed

1 carrot, cubed

1 green beans, chopped

2 tomatoes, chopped

1 teaspoon tamarind paste

1 teaspoon turmeric powder

Salt to taste

For the tempering: 1 tablespoon oil + 1 teaspoon mustard seeds + 1 teaspoon cumin seeds + 1 dried red chili + 1 sprig curry leaves

Instructions:

  1. Pressure cook the dal and vegetables with enough water for 3-4 whistles.
  2. Add the tamarind paste, turmeric powder and salt. Mix well and cook for another minute.
  3. Heat oil in a pan for the tempering. Add mustard seeds, cumin seeds, dried red chili and curry leaves. Let it splutter.
  4. Add the tempering to the kootu and mix well. Serve hot with rice or roti!
